I'm having a bit of a problem. Most rides I build seem to have a high to extreme factor on them. RCTtom suggested banked curves, but that doesn't seem to help. Is there any other way to lower the intensity?

Make sure they don't go over hills or inversions too fast or too slow.

Height is a factor. You may be able to build a coaster 1,000 feet high, but that will never anything but extreme.
The G forces make a big difference. If you don't want extreme, keep them down and keep the transitions smooth. A 4G dive and recovery into a -3G peak with a 2G lateral curve will never be anything but extreme. Have some recovery time between the changes.
Loops and inversions are tricky - too fast or too many and an automatic extreme results.

Could you post a screenshot of one of your rides? It may be easier for us to help you.

It's OK, you at least did better that this, right? (note: this is not my ride, as i would never dare to make a coaster that bad.)
