Will 8 cars let you raise the land height higher than 120 ft. If so how?

It does indeed! It's a bit tricky, though, the easiest way is to build a giga coaster as high as the land you want, e.g., 320 ft, then use the ride menu to bury the coaster. Then destroy it. Now you have high land!
However, if you are going to be using zero clearances in your park, do it before you raise the land, because you risk an infinitely tall land block. 8cars has a build in function to lower the block to the masimum height, then you can lower it with the land tool, but it lowers all land above 120ft to 120 ft, erasing your work in getting the land up there.
I don't think you can do slopes, but it can look a bit like slopes now you can do large scale land moving, and make a bit of scenery to fill the slopes and you have got something beautiful!
Needless to say, building a giga coaster wherever you need high land can get expensive; You can benefit from the "Add Money" functions as well.
