Myst franchise (several games) and the RCT2/3 series, although I spend almost all my "free" game time building in RCT3 now.

I would have to say my favorite of all time is RCT1/2. There is a lot behind it though. Guitar Hero is one of my favorites, the Sims, and Sim Golf are up there too. Nothing is like RCT though...
