To me the process of building a realistic theme park involves building realistic flat rides. The ones they included in the game run the gamut from dead on realism to pure fantasy. My favorite ones to include in my parks are the Tilter, Twister, Giant Ferris Wheel & the Barnstormer.

To me, the best flat ride is the Whirling Dervish. It's hilarious to watch (Or ride, I got dizzy just watching it) and it really brings in the crowds to it.

Same with me. It's really cool looking and not too big of a space user.

The Zipper is surprisingly compact; to transport to another fairground, it uses only one trailer. The trailer is what supports the entire ride while it's in motion. This ride is excellent for small parks with a shortage of land. The top spinner (Top Scan or Space Roller in real life) is another good choice for this requirement.

I'd really like to see a Waltzer in RCT. They are like a tilt-a-whirl on steroids: FAST and INTENSE and completely unpredictable. Also, at the British fairs the attendants stand on the platform and give the cars an extra push :D
